Anyone have favorite recipies for preparing salmon?
 
I know that this may seem like an odd request but humor me.



My wife & I are both trying to lose weight and as part of our grand plan we try to eat fish every once in a while. Problem is, as hard as my wife tries, it often ends up bland or with some combination of spices that repels me.

We are talking about the salmon filets that come frozen in a large bag at walmart. Yeah, I know, fresh is better but we live in North Central Texas and not a lot of fresh fish makes it to the supermarket here.

So, if anyone has any favorite salmon or just fish preparation recipies(not frying) I would appreciate hearing them.

Do you like asian flavors? I find that if you don't have fresh salmon, its best to marinate the heck out of it, and this one works pretty well.

Have you tried tilapia? That's a very good fish that you can find fresh locally here in the Dallas area for fairly cheap. I've got a couple really good recipes for tilapia.

I've cooked it a lot of different ways, but my favorite is to barbeque it on aluminum foil and season it with nothing but Johnny's Seasoning Salt.

I do not have anything to add on salmon but if you are eating fish and want a less expensive fish I suggest giving catfish a try as well. Get some blackening seasoning, cajun dust is very good, and just cook it with that.

For a quick snack in a pinch, might I recommend ditch minnows.

Take off your panty hose and use it a seine. They are small so you will have to catch a lot.

Lay them down on the sidewalk, preferably on a hot day, and then use a magifying glass, centering the beam just behind the gills. Takes about a minute of cooking for each one. Pop them in your mouth, all done!

Not many ditch minnows in Utah...
 
but you can do the same with pill bugs (sometimes mistakingly called a potato bug). However, there really is no need to cook 'em. They're pretty crunchy when eaten raw.
