What would it be?

Type meaning ethnicity such as Italian, Thai, Japanese, etc?

If so, then I would pick Vietnamese. Best combination of flavors and spices and everything. Thai is a close second.

How to define "American"? I thought of it as a catch-all for steak, seafood, and burgers.

Posted before the poll was up. Since Thai would be my second choice and Indian my third I answered that one - that way I get two cuisines for the price of one because they are two very distinct types of food.

I haven't had Vietnamese. How does it differ from Thai?

Nothin' but Italian for me.

There is a lot of overlap. I think the differences are subtle - Vietnamese has strong influences from the French and the Chinese while I would say Thai is influenced by Malay, Indian, and Chinese.

I would say Vietnamese dishes are generally geared more towards seafood or coastal type cooking than Thai dishes are.

That being said, all the cuisines of Southeast Asia (Thai, Lao, Malay, Vietnamese, etc.) are very similar.

Have to go with Thai, but that was a tough one!
