Depends on what you are going to do. If car camping, definitely get the 3 man. If backpacking, get the 2-man.
A 3 man fits my queensize air mattress. One of the cheap Academy dome tents. Get a cheap 3 man, and a quality two-man.
Just like you will need two sleeping bags. A winter bag, and a lighter bag, although recently I stay away from sleeping bags at all. I like using sheets and blanket.
