Well, the exact make-up varies a bit from place to place, but it generally has salmon, crab, and avacado and is
deep-fried and has a spicy sauce on top. (anything tastes good deep-fried, eh?)
Here is the Happy Sumo version (look about half-way down on the right):

Happy sumo is great, but pricey. They have one at Gateway.
The Benihana in downtown SLC has a $25 all-you-can-eat sushi special. It is good quality sushi and is a great bargain if one likes sushi. They have a similar Vegas roll that is deep-fried. They slice the roll and put each each slice on its side and then put a thin slice of a hot pepper and a dab of spicy sauce. Almost looks like a nipple on each slice (vegas roll - get it?). Has a very nice flavor if you like spicy food.
There is a place in Provo by Shopko called Asuka? that does a $15 all-you-can-eat sushi special. Not as good quality as Benihana, but well worth the price. They have a Vegas roll that is decent.
