What IPU said. We had perfectly servicable countertops at the time. I had no desire for new ones, but she really did. It's similar to when we got a nice big HD TV. She watches at least as much TV as I do, but she was happy watching the old 20 inch model, so I consider the TV a gift for me. A lot of the gifts we get each other (cameras, DVDs, Books) are used by both of us, but that doesn't mean they aren't gifts.
Now, to your point, the countertops are more of an investment than the TV, and they do increase the value of our house, so it's not quite the same as getting her a $5,000 piece of jewelry, but she still thought it was a pretty nice gift.
