kind of ironic given that they beat BYU.

They're not satisfied being a program that is merely better than BYU.

It's a bizarre firing in my opinion.

Delusions of grandeur.

Last year UTA won something like 27 games. They returned basically the whole team, so they were expected to be really good. They underachieved pretty badly based on the previous year and their experience. From what I read somewhere they had some major personality conflicts and couldn't get along. So the coach gets fired.
