In some ways, the offenses in the NFL are actually simpler, although that is changing. The NFL has never been a hotbed for offensive innovation. They let the college level be the innovators and when something appears to work long enough with enough different teams, then they start implementing it in the NFL (spread passing attack, Wildcat formation, etc.)

NFL defenses are infinitely more complex. BYU's pass defense is actually pretty complex and that is because we have a former professional defensive coordinator on our staff.

Beck still hasn't signed with anyone.

I assume that his old contract is void, and that he would need to sign a new contract.

I hope he doesn't shoot himself in the foot and wind up in Canada due to an over-inflated sense of value.
