I'm thinking of getting a Foreman-style indoor grill to use during the winter for grilling (veggies, steaks, etc.), and other times as a sort of panini press. Anyone have one of these? Do you use it?

I grill outside during the winter. The first time I did it, you would have thought I violated some sort of neighborhood statute the way the neighbors peered over the fence and wondered what the heck I was doing.

Get a cast iron griddle that you can put on your stovetop. You can get a reversible one with ridges on one side and flat on the other. You can get a grill press if you want a panini. I love cooking with cast iron. You get a great even heat and good flavor. If you take care of it, it will last the rest of your life.
