Is it only women who have to go through this? Are there any events where women would have the advantage, and so the men are tested?

Women might have an advantage in shooting sports.

It's not just one criteria that makes you a woman or a man. Your phenotype is not everything.

I hear about this male/female definition thing every now and again. I wonder how it all fits with LDS theology?

it doesn't. The proclamation of the family says that gender is eternal. It seems to be binary, and has no statement on intersex.

My understanding is that transsexuals are not allowed to hold the priesthood. Probably can't go to the temple either.

no pure shooting sports. LOL.

What I have heard is that women are naturally more able to hold still.
